Lactylates

Niacet Niaproof Sodium Stearoyl Lactylate and Calcium Stearoyl Lactylate are effective and versatile emulsifiers used in bread, buns, and other bakery products as a dough strengthener and crumb softener. Other food applications are use in puddings, snack dips, and coffee creamers.  Both are very effective due to its ionic and nonpolar nature, Because of this ability to interact with gluten proteins promoting their crumb structure uniformity. SSL and CSL are non-toxic, biodegradable and sustainable.  Lactylates, including SSL and CSL, have been subjected to extensive safety evaluations before being FDA approved for use as a food additive.
