Progusta Sodium Acetate

Progusta SA (sodium acetate) is an effective buffering agent, a flavoring agent and also a growth inhibitor of molds and bacteria found in various foods products.

Acidity regulation (buffer)

Sodium acetate mixed with acetic acid forms a pH buffering mixture, which can be used to stabilize the pH of foods in the range pH 3-6. The table below gives indicative values of compositions needed to give a desired pH. Concentrations can be diluted at least 10 times with minimum effect on pH, stability however decreases.

Preservation

Progusta SA can be used to preserve processed meats and it is often used in combination with lactates. The typical inclusion level is 0.2 to 0.5%. Sodium acetate is mainly used in salad dressings, meat products, sauces, dressings and ready meals.

Flavoring

Progusta SA is used in combination with sodium diacetate and other acids as a flavoring agent in various meat products and ready meals.
